Savory Southwestern Buddha Bowl

Ingredients

  • *Southwestern Dairy-Free Avocado Ranch Dressing (ingredients and recipe below)
  • Quinoa
  • Roasted Sweet Potatoes
  • Sautéed Squash and Zucchini
  • Cauliflower
  • Bell Peppers
  • Carrots
  • Spinach
  • Blueberries
  • Squeeze or lime or lemon
  • *Optional: Add your favorite nuts or seeds for more crunch!
  • {Southwestern Dairy-Free Avocado Ranch Dressing}
  • INGREDIENTS
  • 1 cup Pacific Foods Hemp Unsweetened Original Non-Dairy Beverage
  • 1/2 of an avocado
  • 1 tsp nutritional yeast
  • 2 tbsp apple cider vinegar or freshly squeezed lemon juice
  • 1 garlic clove
  • Handful of cilantro
  • Handful of dill
  • 1 tsp honey
  • salt + pepper to taste
  • *Optional (and highly recommended): add 1 - 2 tsp of cumin for an extra kick!

Instructions

  1. {Southwestern Dairy-Free Avocado Ranch Dressing}
  2. Cut the avocado in half, remove pit and scoop into a blender or food processor.
  3. Add all of the other ingredients and blend until smooth.
  4. Taste and adjust to your liking.
  5. If dressing needs additional thickening refrigerate for an hour before serving.
  6. *Keeps in the refrigerator for up to 3 days

  8. In a bowl add your quinoa in first
  9. Then add in the rest of the ingredients
  10. Top with Southwestern Dairy-Free Avocado Ranch Dressing
  11. Mix together and enjoy!
