Cheesy Rice & Black Bean Dip
Ingredients
- 3 cups cooked Mahamta Jasmine Long Grain RIce
- 1 can organic black beans
- 1 can diced tomatoes & green chilies
- 1 bag of Mexican style blend of cheeses
- 1 cup your favorite salsa
- 1 tsp cumin
- 1 lime
- 1 organic avocado
- 1/2 tsp cayenne
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- salt & pepper to taste
- Serve with:
- Tortilla Chips
- Bell Pepper Strips
- Sour Cream
Instructions
- Preheat oven to 400 degrees fahrenheit
- In a mixing bowl combine cooked Mahatma rice, beans, tomato and chili mix, 2 cups of Mexican cheese, salsa and spices.
- Spoon mixture into greased skillet or baking dish and spread evenly.
- Cover with aluminum foil and bake for 30 minutes.
- After 30 minutes, remove from oven and take the aluminum foil off. Then take the extra 1 cup of cheese and spread evenly over the top. Place dish back into the over and cook another 7 - 10 minutes until cheese is completely melted.
- *Optional: Top with a squeeze of lime juice, avocado and cilantro.
- Serve hot with tortilla chips and veggie crudite such as sliced organic bell peppers on the side.
