Hawaiian Shrimp Burger
Ingredients
- 3/4 cup green onions, sliced
- 2 cloves garlic, minced
- 2/3 c Sprouts Bread Crumbs – Panko
- 1/4 cup unsweetened coconut flakes
- 2 tsp ginger, minced
- 2 tbsp Sprouts Soy Sauce
- 2 tsp Sriracha
- 2 tbsp Island Teriyaki Sauce and Marinade
- 1 tsp Turmeric
- 1 tsp Garlic Powder
- 1 Lime, zested and juiced
Instructions
1. Prepare all of your ingredients and get them ready for mixing.
2. Mix together all ingredients, other than the shrimp and garlic, in a medium sized mixing bowl.
3. Once combined set aside – note: this mixture smells absolutely amazing!
4. Now it’s time to get started on the shrimp – Dry shrimp off and put into a food processor or blender. Add the two cloves of garlic and season with cracked black pepper and salt. Chop to combine, but make sure to not overly chop or grind. You still want some good sized pieces of shrimp in there. If you over chop the garlic and shrimp in the food processor it can turn to mush and you definitely don’t want that!
5. Form into four patties and place in the refrigerator for about an hour. This gives the shrimp patties time to firm up, making them easier to handle.
6. Heat your grill or grill pan to medium high heat and coat with oil. We used spray Coconut cooking oil. Cooking time for the patties is 5-6 minutes per each side.
7. Let them rest on a plate for 5 minutes. While you’re doing this, you can throw the pineapple slices on the grill for 1-2 minutes per side.
8. Enjoy!
To serve, you can always add lettuce and/or a whole wheat bun. To make this a low carb meal, we layered the shrimp burger with chili garlic cole slaw and herbed avocado mayo and topped it off with a slice of grilled pineapple for added texture and sweetness.
Another alternative spread is to use your favorite Teriyaki sauce, we love the selection at Sprouts. All you need to do is warm up the Teriyaki sauce in a sauce pan on the stove. We like to stir and reduce the sauce for about 4-5 minutes so that it becomes a bit thicker.
